Mexican Meatloaf (Kitchen Aid Recipes)
1 Cup Salsa, divided
2 cup soft bread crumbs
1 small onion, chopped
1 egg
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1 pound lean ground beef
1/2 pound ground turkey (I used 1-1/2 pounds of ground beef)
Place 3/4 cup salsa, bread crumbs, onion, egg, Worcestershire sauce, thyme, garlic salt, and pepper in mixer bowl. Attach bowl and flat beater to mixer. Turn to Stir Speed, mix about 30 seconds. Add beef (and turkey). Continuing on Stir Speed, mix about 45 seconds, or until blended.
The instructions then call for you to divide mixture into 3 equal parts. Shape each part into a loaf about 6x3x12 inches. Place loaves on rack in shallow baking pan. Spoon remaining salsa on tops of loaves. Bake at 350 degrees F. for 40 to 45 minutes, or until no longer pink in center. Of course, I didn't do that, I made two loaves that were larger and needed to cook longer maybe an additional 1/2 hour. I used the meat therm. and when it hit 175 degrees. I took them out of the oven.
Note to self: pay attention to the recipe. Also, something learned. Because I have never used a recipe for meatloaf and never used bread crumbs before, I didn't realize that the bread crumbs absorbed the grease usually found at the bottom of the baking dish. Or, maybe Papa bought really good ground beef..............
The end result was Papa and I thought it was the best meatloaf ever! And, you don't need catsup!!!!!!!

Kitchen New Look
OK, I am over 1/2 done with the dresser. Today, is way to windy.....so I brought it in and decided to see what it looks like so far. Here we go. Believe it or not, both Papa and I think we will leave the drawers natural, with just varithane (sp) on it.
